Beet and Vegetable Roast
Tops (Greens) and Stems of 8 Beets, cut into
bite sized pieces
1 large or 2 medium size Beets, cut into bite sized pieces
4 Carrots, thickly sliced
2 Onions, chunked
4 White Potatoes, medium size, cut into bite sized pieces
1 tbsp Bellís Seasoning
Oatmeal, quick (optional)

Wash and cut tops and stems of beets into pieces. Wash, peel, and cut beets, carrots, onions, and potatoes. Place all vegetable pieces in a microwaveable baking dish with cover.
Add Bellís Seasoning and mix. Cover and bake in microwave oven at high setting. Mix every 5-10 minutes until vegetables are tender and to ensure uniform cooking. Adding and mixing in a small amount of quick oats before serving may absorb any excess liquid remaining in baking dish.
If using a conventional oven, bake at 350 degrees F. Mix every 15-20 minutes until vegetables are tender and to ensure uniform cooking. If necessary, add and mix in a small amount of quick oats to absorb any excess liquid from vegetables.
