Dalida's Taco Salad

Serves: 4

Preparation time: 15 minutes


1 package burger-style crumbles

1 onion chopped coarsely

2 Serrano chilies

1 bag pre-washed romaine lettuce

1 pint cherry or grape tomatoes, halved

1/2 cup cooked corn

2 cloves garlic, chopped

1 avocado, sliced

1/2 cup vegan soy cheese, shredded (optional)


  • Heat up a medium sauce pan with extra virgin olive oil on medium-high heat and brown the soy crumbles for a few minutes...add the onion and Serrano chilies and brown for about 8 more minutes or until well-cooked.
  •  While browning you can add seasonings like taco seasoning, salt, pepper, cayenne, crushed red pepper to taste.
  •  In a large bowl, combine chopped romaine, tomatoes, corn, garlic, avocado, soy cheese and choice of dressing. I like to use a mixture of olive oil, vegenaise (for creaminess), some Bragg's, lemon juice, curry powder and apple cider vinegar
  •  Toss salad.
  •  Pour soy crumbles mixture on top.

It is complete! You have a delicious, zesty hearty salad!! Enjoy!
